Description

The app can sometimes feel quite slow due to endpoints taking ~ 1 to 3 seconds to respond, particularly list_merchants is causing slugish performance

AC:

Define target endpoints for performance measurement and profile them
Create a small report and attach it to this ticket, it should identify the endpoints that we would benefit the most from improving.
Come up with an improvement plan for the key endpoints
